This homemade almond milk is a creamy and versatile dairy alternative, made simply with raw almonds and a touch of vanilla extract for natural sweetness. Customize it with your favourite raw nuts for a unique flavor twist, and enjoy it as a refreshing drink or a base for your favorite recipes!

Almond milk will keep in the refrigerator for about 3 – 4 days. Be sure to save the leftover almond meal to make 
almond biscuits!

Ingredients

  • 1 - 2 cups raw almonds (try other raw nuts also)
  • Vanilla extract to taste

Steps

1. Soak nuts overnight in 2 - 3 time as much water as nuts. Throw away the water and soak them for another 6 – 12 hours longer.
2. In a good blender, add the nuts, about a litre (1 quart) of water (vary to thickness desired), add in vanilla and blend until smooth.
3. Place in a nut milk bag (you can also use a fine strainer or cheesecloth) and squeeze. You can do it twice and or add more water depending on the thickness you desire.
