This vibrant and nutritious salad combines earthy beets, sweet apples, and crunchy pecans with warm, fluffy quinoa. Tossed in olive oil, it’s a colourful and satisfying dish perfect as a light meal or a hearty side.

Ingredients

  • 1 cup cooked quinoa (warm)
  • ½ cup cooked, peeled beets
  • 6 shredded medium sized carrots
  • 2 apples (peeled and sectioned)
  • 1 handful of pecans, lightly dry roasted
  • 2 tbsp olive oil

Steps

Combine all ingredients with warm quinoa, stir and serve.
