Caesar Salad Dressing

This classic Caesar dressing is creamy, tangy, and packed with flavor. Perfect for drizzling over crisp romaine lettuce, it’s a versatile addition to any salad. Try using lime juice instead of lemon juice, for variety.
Olive oil solidifies when stored in the fridge. If the dressing becomes solid, hold under warm water for a minute or leave at room temperature before serving.
Ingredients
- 1 egg yolk
- ¼ cup lemon juice
- 2 - 3 anchovy fillets
- 3 cloves garlic, chopped
- ½ tsp salt
- ¼ tsp black pepper
- ⅓ cup vegetable oil
- ⅓ cup extra-virgin olive oil
Steps
1. Place egg yolk in a food processor along with lemon juice, anchovies, garlic, salt, pepper and blend for 1 minute or until ingredients are pureed.
2. Mix the two oils together and add slowly in a steady stream to the processor while it is on high speed.
3. Scrape down the sides of the bowl and blend for 30 seconds. Transfer Caesar dressing to a jar and store in the refrigerator.
