Curried Spinach Soup

This hearty and aromatic spinach soup combines the earthy goodness of spinach with the warming flavors of curry and ginger. The addition of basmati rice and potato makes it a satisfying dish, perfect for a cozy meal on a chilly day.
Ingredients
- 1 bunch spinach
- 2 tbsp vegetable oil
- 1 onion, diced
- 2 large cloves garlic
- 1 tsp ginger root, chopped
- 2 tsp curry powder
- 6 cups water
- 1 large potato, diced
- ⅓ cup raw basmati rice
- 1 tsp salt
Steps
1. Wash spinach thoroughly to remove any grit and dirt. Set aside.
2. Sauté the onion over medium heat for 5 minutes or until soft.
3. Add garlic, ginger, curry and sauté for 3 minutes stirring constantly, so curry does not burn.
4. Add water,potato, rice and salt. Bring to a boil, reduce heat, cover and simmer for 15 minutes or until rice and potato are cooked. Add spinach and cook for 3 minutes.
5. Transfer spinach soup to a blender and puree until smooth. Return to pot, heat and serve.
