Quinoa Meatloaf

This hearty and nutritious meatloaf combines protein-rich minced beef with quinoa for a wholesome twist. Flavoured with aromatic herbs like thyme and rosemary, and a touch of heat from chilies, it’s a satisfying and flavourful meal perfect for any occasion.

Ingredients

  • 1 pound minced beef
  • 2 eggs
  • ¼ cup uncooked quinoa
  • 1 medium onion
  • 3 - 6 garlic cloves
  • 2 chilies
  • 1 tbsp coconut oil or olive oil
  • 2 tsp thyme
  • 1 tsp rosemary
  • Pinch of black pepper (to taste)
  • 1 tsp salt

Steps

1. Cook quinoa as directed. Preheat oven to 350°F.
2. Add onion, chilies, and cloves to finely minced beef.
3. Add cooked quinoa and all ingredients to a large bowl and mix together.
4. Grease a loaf tray with coconut or olive oil, then add the mixture and bake for 1 hour.
