Vegetable Chowder

This hearty vegetable chowder is a cozy, warming soup perfect for cooler days. Packed with tender potatoes, carrots, and celery, it’s infused with the zesty warmth of ginger root and seasoned with oregano and nutmeg.

Ingredients

  • 1 cup chopped potatoes
  • 2 tbsp olive oil
  • ½ medium onion, diced
  • 1 tsp ginger root, peeled & minced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 ½ cups potatoes, diced
  • 3 cups vegetable stock or water
  • 1 tsp oregano
  • ¼ tsp nutmeg
  • 2 tbsp chopped parsley
  • Salt and pepper to taste

Steps

1. Cook potatoes for 25 minutes or until soft. Mash and set aside.
2. Sauté onions, ginger, carrots and celery over medium heat for 3 minutes or until vegetables start to brown.
3. Add potatoes, stock, oregano, nutmeg and bring to a boil, reduce heat, cover and simmer for 10 minutes.
4. Add parsley, mashed potatoes and squash. Bring to boil again and adjust seasoning.
