This hearty and aromatic dhal combines tender lentils with warming spices like curry and cumin, enhanced by the sweetness of carrots and celery. A simple yet flavorful dish, it’s perfect as a comforting meal or a side to your favorite flatbread or rice. Serve this dish over a bed of Rice Pilaf.
Ingredients
- 1 tbsp olive or grape seed oil
- ½ onion, diced
- ½ cup carrots, diced
- ½ cup celery, diced
- 2 cloves garlic, minced
- 2 tsp minced ginger root
- 1 ½ tsp curry powder
- ½ tsp cumin powder
- 2 ½ cups vegetable stock or water
- 1 cup brown or green lentils
- Salt to taste
- ¼ tsp pepper
Steps
1. Sauté onions, carrot, celery, garlic and ginger in oil over medium heat for 3 – 5 minutes or until onions are soft.
2. Add curry and cumin and sauté for 2 minutes stirring constantly to avoid scorching the spices.
3. Stir in stock, lentils and bring to boil, reduce heat, cover and simmer for 45 - 50 minutes or until the lentils are soft.
4. Add salt and pepper to taste.
