Tomato Rice Salad

Ingredients
- 2 cups cooked brown rice, cooled
- 2 medium ripe tomatoes, diced
- ⅓ cup sunflower seeds
- 2 medium green onions, chopped
- ¼ tbsp extra-virgin olive oil
- 2 tbsp lemon juice
- 2 tsp chopped fresh mint or ⅔ tsp dry mint
- ½ tsp salt
- Pinch of pepper
Steps
1. In a mixing bowl, stir in the rice, tomato, sunflower seeds, green onions, olive oil, lemon juice, mint, salt and pepper.
2. Adjust seasoning.
