The combination of suey choy, kale, broccoli mixed with the tahini in the dressing is a fabulous way to consume calcium-containing foods.

Ingredients

  • 1 cup mung bean sprouts
  • 1 cup suey choy (Chinese cabbage), sliced thin
  • 1 cup kale, sliced thin
  • 1 cup broccoli florets
  • ½ cup carrots, grated
  • ¼ cup red pepper, chopped
  • Lemon Tahini Dressing

Steps

1. In a large salad bowl, mix the sprouts, suey choy, kale, broccoli, carrots, red pepper and toss.
2. Serve with
 Lemon Tahini Dressing.
