Curried Cauliflower and Potato

The combination of cauliflower, potatoes and curry is ageless. The amount of curry can be increased or decreased depending on your preference for heat.
Ingredients
- 1 tbsp olive oil
- 1 tbsp butter
- 1 large onion, diced
- 2 tsp curry powder
- 1 large potato, diced
- 2 cups cauliflower florets
- ½ cup water
- ½ tsp salt
- Pinch of pepper
Steps
1. Heat oil and butter over medium heat until the butter starts to bubble. Add onions and sauté for 5 minutes or until
onions are soft.
2. Add curry and sauté for 2 - 3 minutes stirring constantly to avoid scorching the powder.
3. Add potato, cauliflower, water, salt, pepper, cover and simmer for 15 minutes or until the potatoes and cauliflower are cooked.
