This crisp and colourful green bean salad combines tender green beans with sunflower seed sprouts, crunchy carrots, and vibrant red bell peppers. Tossed with refreshing cucumber, green onions, and a bed of lettuce leaves, it’s a light and nutritious dish perfect for any meal. Serve it as a side or a healthy main course!

Sunflower seed sprouts taste very fresh and just like sunflower seeds. If they are not available, mung bean sprouts are more widely available in supermarkets.

Ingredients

  • 1 cup cut green beans
  • 1 cup sunflower seed sprouts or mung bean sprouts
  • ¾ cup julienned carrots
  • ¾ cup large red bell pepper, diced
  • ½ cup large cucumber, diced
  • ¼ cup green onions chopped, optional
  • 8 cups torn lettuce leaves

Steps

1. In large bowl mix green beans, sprouts, carrots, pepper, cucumber, and green onions, if using.
2. Mix in lettuce leaves and toss.
3. Serve with Lemon Oil
 Dressing.
