Green Soup with Ginger

This vibrant green soup is a nourishing blend of leafy greens, leeks, and a zesty kick of fresh ginger. Simmered in a rich chicken or vegetable stock and brightened with a touch of lemon juice, it’s a light yet flavourful dish perfect for any season. Adjust the ginger to your taste for an extra warming touch!

Ingredients

  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 1 teaspoon Celtic salt
  • 2 large leeks, white and green parts, sliced
  • 2 cups greens (swiss chard, kale, spinach, collards, etc.)
  • 2 - 6 tbsp fresh ginger, minced (plus more to taste)
  • 2 quarts chicken stock (or vegetable stock)
  • 1 - 2 tbsp fresh lemon juice

Steps

1. Cook onions with salt, in a large oiled pot over low heat until soft and golden, about 15 – 20 minutes.
2. Add in leeks, cooking for an additional 10 minutes.
3. Add greens and ginger, sautéing for 5 minutes more.
4. Then add chicken or vegetable stock and cook for 10 additional minutes.
5. Add lemon and it is ready to eat. You can optionally puree at this point, either with a wand or a good blender.
