This vibrant and nutrient-dense salad combines peppery arugula, crunchy red cabbage, and creamy avocado. Topped with sweet goji berries and protein-rich hemp seeds, it’s a refreshing and satisfying dish perfect for a light lunch or a wholesome side.

Ingredients

  • 2 bunches of arugula (to taste)
  • ½ chopped or shredded red cabbage
  • 3 tbsp goji berries
  • 1 - 2 ripe avocados chopped
  • 4 - 6 tbsp hemp seeds

Dressing:
1½ tbsp extra-virgin olive oil and freshly squeezed lemon juice

Steps

Combine all the ingredients into a large bowl. Pour dressing over top and mix together.
