These flavourful sweet potato wedges are a healthy and satisfying treat, packed with vitamins and fibre. Coated in olive oil and seasoned with a blend of thyme, rosemary, cumin, and a touch of mild chili powder, they bake to crispy perfection. Add a sprinkle of salt and pepper for a deliciously wholesome side dish or snack!

Ingredients

  • 1 large sweet potato
  • 1 tbsp olive oil
  • Mixed herbs (thyme, rosemary, cumin, mild chili powder)
  • Salt and pepper to taste

Steps

1. Preheat the oven to 200°C (400°F). Peel and cut the sweet potato into wedges.
2. In a bowl, mix together the wedges, olive oil, salt, pepper and the spice of your choice.
3. Place the wedges flat on a baking tray, and bake for about 25 minutes or until tender and golden.
