Veggie Tofu Stir-Fry
Serves: 2
Ingredients:
- 1 onion
- 2 tbsp avocado oil
- 1 red bell pepper
- 1/2 block tofu
- 1/2 cup cooked rice
- 1 cup baby arugula
- 3 tbsp coconut aminos
- Garnish: 2 tbsp sesame seeds
Directions:
Dice the onion and add it to a frying pan with avocado oil. Cook for 4–5 minutes.
Add the remaining ingredients and cook for another 4–5 minutes.
Top with sesame seeds and enjoy!
