This light and refreshing salad combines hearty brown rice with juicy tomatoes, a hint of mint, and the crunch of sunflower seeds. Perfect as a side dish or a stand-alone meal, it’s a simple yet flavorful option for any occasion. Serve it on a platter over a bed of lettuce greens.

Ingredients

  • 2 cups cooked brown rice, cooled
  • 2 medium ripe tomatoes, diced
  • ⅓ cup sunflower seeds
  • 2 medium green onions, chopped
  • ¼ tbsp extra-virgin olive oil
  • 2 tbsp lemon juice
  • 2 tsp chopped fresh mint or ⅔ tsp dry mint
  • ½ tsp salt
  • Pinch of pepper

Steps

1. In a mixing bowl, stir in the rice, tomato, sunflower seeds, green onions, olive oil, lemon juice, mint, salt and pepper.
2. Adjust seasoning.
