Turmeric Chicken Soup

Serves 2
Ingredients:
- 1 onion
- 1 small acorn squash
- 1 tsp ginger finely grated
- 1 tbsp avocado oil
- 1/2 cup water
- 2 cup veggie or chicken broth
- 1 cup milk of choice
- 1 tsp ground turmeric
- 1 tsp cumin
- 2 cups chopped kale
- 1 tbsp lemon juice
- 1 cup cooked chicken
- Salt and pepper to taste
Directions:
- Dice onion and squash and add to a medium saucepan with 1 tbsp avocado oil.
- Stir and cook on low heat for 2-3 minutes. Add water and turn heat to high. Boil for 3-4 minutes until squash is almost cooked through.
- Add in veggie broth, turmeric, cumin, milk, kale, and chicken. Stir to combine. Reduce heat to medium-low.
- Add salt and pepper, and lemon juice. Stir and enjoy!
