Turmeric Chicken Soup

Serves 2

Ingredients:

  • 1 onion
  • 1 small acorn squash
  • 1 tsp ginger finely grated
  • 1 tbsp avocado oil
  • 1/2 cup water
  • 2 cup veggie or chicken broth
  • 1 cup milk of choice
  • 1 tsp ground turmeric
  • 1 tsp cumin
  • 2 cups chopped kale
  • 1 tbsp lemon juice
  • 1 cup cooked chicken
  • Salt and pepper to taste

Directions:

  1. Dice onion and squash and add to a medium saucepan with 1 tbsp avocado oil.
  2. Stir and cook on low heat for 2-3 minutes. Add water and turn heat to high. Boil for 3-4 minutes until squash is almost cooked through.
  3. Add in veggie broth, turmeric, cumin, milk, kale, and chicken. Stir to combine. Reduce heat to medium-low.
  4. Add salt and pepper, and lemon juice. Stir and enjoy!
