Veggie Egg Bites
Makes 10
Ingredients:
- 1 cup egg whites
- 2 whole eggs
- 1 cup diced red bell pepper
- 1 cup diced yellow bell pepper
- 1 cup diced zucchini
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper, to taste
Directions:
In a medium mixing bowl, whisk together the egg whites, whole eggs, and almond milk.
Stir in the diced vegetables, garlic powder, paprika, salt, and pepper.
Divide the mixture evenly into a lined or greased muffin tin.
Bake at 350°F for 20–25 minutes, until set.
Let cool slightly, then enjoy—or store for a quick grab-and-go breakfast!
